We’re all hoping for bright spring weather this Easter so we can enjoy German traditions like egg hunts outdoors! In the meantime, here’s a recipe for the most classic German Easter cake: the Easter lamb cake!

📝 Ingredients:

  • 125 g (½ cup) soft butter
  • 100 g (½ cup) sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 2 eggs (size M)
  • 150 g (1¼ cups) flour
  • 1 tsp baking powder
  • 50 g (½ cup) ground almonds (optional)
  • 2 tbsp milk
  • A pinch of salt
  • Powdered sugar for dusting


🥣 Instructions:

  1. Preparation:
    • Preheat the oven to 180 °C (350 °F) for conventional heat or 160 °C (320 °F) for fan-assisted.
    • Grease and flour a lamb-shaped cake mold.
  2. Make the batter:
    • Whip the butter, sugar, and vanilla sugar until frothy.
    • Beat in the eggs one at a time.
    • In a separate bowl, mix flour, baking powder, ground almonds, and salt.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until smooth.
  3. Bake:
    • Pour the batter into the prepared mold and close it securely.
    • Bake in the preheated oven for 40–45 minutes.
    • Use a toothpick to check the cake—if it comes out clean, the cake is ready.
  4. Cool and decorate:

    • Let the cake cool in the mold before carefully removing it.
    • Dust with powdered sugar and add a decorative ribbon or other Easter touches if desired.


    🎉 Tip:

    For a bit of extra flavor, add some lemon zest or a few drops of rum extract to the batter.
